My first from-the-beginning curry (with chickpeas and cauliflower)

Actually this is the first Im happy with. Sooooo tasty that I had to take three portions:P

To start from the beginning I have to say that I got off from work a bit earlier today, did some girly stuff in the city and since parking time was not over yet I stepped into the biggest Eco food shop in Tartu. I was in trouble right away. This was like heaven – so much tasty stuff. Of course I ended up (20 min later) with a reciept big enough to pay for a car repair (direct quote from my very understanding bf). So I wanted to show him where I can actually use all those cans and bottles (I got even a sprouter – I will show it in next post!). And since ingredients directed me towards curry I have once tried to make (but failed miserably – possibly because I didnt have coconut oil and/or good tomatos:P) I tried to do it once again. And it was great! I only needed:

  • 2 Tbsp coconut oil
  • 2 medium onions
  • 3 big cloves of garlic
  • 1 inch ginger
  • 1 Tbsp of garam masala
  • 2 tsp of ground coriander
  • 2 tsp of ground cumin
  • 1 tsp of turmeric
  • 2 cans of chickpeas
  • 2 cans or one huge bottle of diced tomatoes
  • 1 rather small cauliflower
  • 1 cup water (or coconut milk if you have not forgot to buy it)
  • salt and pepper
  • brown rice for serving

Here is what I did:

First of all I heated coconut oil, added onion, garlic and ginger and sauteed for 5 minutes…until soft not brown. Like this:


In the mean time I mixed the spices and chopped the cauliflower:Image

Then added spices to the pot and cooked (stirred constantly) for 1 minute.

Then I added rinsed chickpeas, tomatos, water and cauliflower


After 15 minutes seasoned it with salt and pepper and ready it was.


Did I already said it was great? We even have leftovers for today!

Later on went to the cinema – have you already seen this? Lady next to me left in the middle of the movie…why of why:)  I liked it.
