500 (!) calorie DAY STARTER smoothie with spinach, avocado, banana and dates

I can not count the times I have tried to do spinach-avocado smoothie and ended up squeezing it in crying inside since it is so tasteless and I can not throw it away because avocados are too expensive and gooooood! (to good for smoothie some might even say – I disagree)

So this time – SUCCESS at last! Try it out – its thick, really nutritious and soooooo tasty. I could eat it for dessert.

  • One huge or two little avocados
  • One banana
  • 50 g of frozen baby spinach
  • 5 dates
  • 100 ml

Blend it all and afterwards apologize to your blender. Mine was upset because dates are rather hard here in Estonia…probably because of the weather. Too cold to grow nice and soft:P (sorry – snow patches at the end of April do make you bit sarcastic)

If you are interested in numbers then C-vitamin daily intake is already doubled after this smoothie. Iron intake is also good (3mg).

Proteins: 6.95 g

Fats: 30,27 g

CH: 73,55 g

 

Cauliflower pizza – far better then “real one”

I am not a huge fan substituting everything I used to eat: soy burgers, frankfurters and soy yogurts make me just confused. I`m not that smart, you know, it is easy to confuse me:P. Fun to try out but I wouldn’t include them in my everyday diet. Plants in their natural (or at least recognisable) form are the best. But this was a special occasion – my best friend visited me after a YEAR and she had cravings for pizza…and I remembered seeing cauliflower-crust pizza somewhere… (we are both rather vegan and gluten-free) – so we decided to go for it. This was a decision we didn’t have to regret (like we would regret anything:p)

Let me present proudly, my first and only guest post from girl with a ridiculously expensive hand blender

“For the world’s best cauliflower crust pizza you need:

  • 2 best friends
  • 1 cauliflower
  • ca 100 ml oat flour
  • 200 ml almond flour
  • 100 ml water
  • 3 egg substitute (I have powder version – added 3 tbsp)
  • Saltd

Grate your cauliflower, until not too small – rice-like pieces are OK.

Mix it, mix it all together.

Throw it playfully in the air, until you get a nice round shape. Obviously a joke, BUT we know a person, who knows a person, who claims, that she can actually do it. That person can cheerfully eat my face.

We pressed it on a griddle and precooked it 15-20 minutes at 220C.

  • 1 carlic
  • 1 onion
  • Olive oil
  • Salt
  • Pepper
  • Basil
  • Oregano
  • 6-8 peeled tomatoes

Throw olive oil, chopped carlic and onion in a pot. Fry it 5-7 minutes? Who cares, how long. Add tomatoes and the rest. Stew it as long as you possibly can – longer is better. Leave it on a balcony to cool down. What about the birds?!?!? We don´t give a fuck about the birds!

1 bellpepper

1 carrot

Cherry tomatoes (for fun!)

250g of fried mushrooms

Vegan parmesan

Shred it, chop it, bisect it and throw it on the pizza (tomato sauce is already there!). In the oven it goes – 220C for who knows how long – steal a piece of bellpepper or carrot time to time and you´ll figure it out!

Eat yourself silly.

Steal food from the pan and eat it behind the door, so noone could see you (that´s what I did).

Fight for the last piece.

p.s. Pizza was also tested on one boyfriend with exceptionally good taste (keeps loving everything I cook). So Highly recommended!
